Brief introduction: 

316 stainless steel is known as medical grade stainless steel, also named 18/10 stainless Steel. 304 stainless steel is known as food grade stainless steel, also named 18/8 Stainless steel. 201 is not as effective at preventing corrosion, mostly use for industry equipment, also named 18/0 stainless steel. Nowadays most water bottles use 304 stainless steel. 

Differences:

The Ni content is the important factor affecting the corrosion resistance, the more Ni, the better corrosion resistance. For 316 stainless steel, also add Mo, so it has better corrosion resistance in high temperature environment. Ni content also affect the price of the stainless steel, the more Ni, the higher price. 

304 stainless steel is the most used and best cost performance stainless steel, most buyer will chose 304 stainless steel, it can pass the FDA and Rohs test. If your water bottle need to be used for high temperature environment and saline and chloride exposure, 316 stainless steel is a good choice. If you want a cheaper price, you can chose 201 stainless steel.
